Side Dishes

Tzatziki
(Makes 2 cups)

  • 2 small cucumbers (about ¾ pound)
  • salt
  • 1 2/3 cups plain yogurt
  • 4 cloves garlic, crushed
  • 3 Tbsp freshly chopped mint, plus extra for garnish
  • 1 Tbsp lemon juice
  • Freshly ground pepper and salt, to taste.
  1. Cut cumbers in half lengthwise; scoop out seeds and discards. Leave skin on and coarsely grate cucumber into a small colander. Sprinkle with salt and leave over a large bowl 15 minutes to drain off any bitter juices.
  2. Meanwhile, place yogurt, crushed garlic, mint and lemon juice in a bowl; stir until well combines
  3. Rinse cucumber under cold water. Taking small handfuls, squeeze out any excess moisture. Combine grated cucumber with yogurt t=mixture, then season to taste with s alt and black pepper.
  4. Serve immediately or refrigerate. Garnish with extra mint.
  5. Serve with grilled meats or as a dipping sauce for pita and crudités.
