Tabouleh
*This recipe was given many years ago by an excellent Lebanese cook. This is her recipe as it was written by her:
- 2 bunches parsley (1 Italian, 1 curly). Take off the sticks and chop it very fine andwash it and keep it in a strainer for a while.
- Place in a bowl. Add ¼ cup of chopped onion and 3 tomatoes, chopped.
- Add 1 tsp dry mint or 2 Tbsp fresh mint, chopped.
- Add ¼ cup bulgur (which has been softened in ½ cup boiling water for 10 minutes).
- In a small bowl, mix together ½ cup olive oil and ¼ cup lemon juice.
- Add 1 tsp salt and same of black pepper. Add ½ tsp cinnamon (that's my secret ingredient).
- Add the dressing to parsley-bulgur mixture.
- Taste. Add some more oil or lemon or seasonings, to taste.
