Spinach with Sesame Seed Dressing
(Serves 4)

  • 2 bunches fresh Spinach, washed well, stems trimmed
  • 4 Tbsp sesame seeds
  • 3 Tbsp Maple syrup or honey
  • 4 Tbsp soy sauce
  1. Steam or cook spinach in boiling water until just wilted, about 30 seconds. Rinse under cold water, drain well and chop coarsely.
  2. Heat a large, heavy skillet over med-high heat.
  3. Add sesame seeds and cook, shaking pan constantly, until lightly browned.
  4. Transfer seeds to a small bowl or mortar, and crush them with a heavy wooden spoon or pestle until finely ground. Add honey or maple syrup and continue to grind. Stir in the soy sauce.
  5. Toss the spinach with the dressing in a serving bowl.
  6. Serve chilled at room temperature.
