Spinach with Sesame Seed Dressing
(Serves 6)
*This is delicious with our WGS Lamb Sausages grilled over the barbeque
- ¼ c. butter
- 2 cloves garlic, crushed
- 2 small or 1 large pita
- Leaf or romaine lettuce, washed and torn into bite-sized pieces
- 1 medium cucumber, peeled, and sliced
- 6 green onions, chopped
- 2 medium tomatoes, cut into wedges
- 12 Kalamata olives, pitted
- 2/3 cup crumbed Feta cheese
- ½ cup chopped fresh parsley
- 1/3 cup olive oil
- ¼ freshly squeezed lemon juice
- 2 Tbsp chopped fresh mint
- Salt and freshly ground pepper, to taste
- Preheat broiler to low.
- In small bowl, cream butter with 1 of the cloves of crushed garlic until blended.
- Split the pitas into rounds and spread the insides with garlic butter. Go right to the edges. Place on the broiler rack on a cookie sheet and toast until lightly browned. (Watch carefully). Turn off oven and leave the bread inside until it is dry and crisp enough to break into bite=sized pieces.
- Combine the lettuce, cucumber, onions, tomatoes, olives, feta and parsley in a large salad bowl.
- Whisk together olive oil, lemon juice, remaining garlic clove, mint, salt and pepper.
- Pour dressing over salad and toss gently. Add pita pieces and toss again. Taste to correct seasonings.
