Spinach with Sesame Seed Dressing
(Serves 6)

*This is delicious with our WGS Lamb Sausages grilled over the barbeque

  • ¼ c. butter
  • 2 cloves garlic, crushed
  • 2 small or 1 large pita
  • Leaf or romaine lettuce, washed and torn into bite-sized pieces
  • 1 medium cucumber, peeled, and sliced
  • 6 green onions, chopped
  • 2 medium tomatoes, cut into wedges
  • 12 Kalamata olives, pitted
  • 2/3 cup crumbed Feta cheese
  • ½ cup chopped fresh parsley
  • 1/3 cup olive oil
  • ¼ freshly squeezed lemon juice
  • 2 Tbsp chopped fresh mint
  • Salt and freshly ground pepper, to taste
  1. Preheat broiler to low.
  2. In small bowl, cream butter with 1 of the cloves of crushed garlic until blended.
  3. Split the pitas into rounds and spread the insides with garlic butter. Go right to the edges. Place on the broiler rack on a cookie sheet and toast until lightly browned. (Watch carefully). Turn off oven and leave the bread inside until it is dry and crisp enough to break into bite=sized pieces.
  4. Combine the lettuce, cucumber, onions, tomatoes, olives, feta and parsley in a large salad bowl.
  5. Whisk together olive oil, lemon juice, remaining garlic clove, mint, salt and pepper.
  6. Pour dressing over salad and toss gently. Add pita pieces and toss again. Taste to correct seasonings.
