Pears with Melted Cambozola
(Serves 6)

*Cambozola is an Italian cheese that combines camembert and gorgonzola.

  • 2 green onions, white part only
  • 1 small ripe pear, peeled and cored
  • 3 Tbsp olive oil
  • 1 ½ Tbsp white wine vinegar
  • Salt and freshly ground pepper to taste
  • 3 ripe pears
  • 3 tsp chutney
  • 6 ounces Cambozola
  • ½ head Boston lettuce
  1. Heat oven to 375 F.
  2. In a food processor or blender, puree the green onions, small pear, oil, vinegar and salt and pepper until smooth. Reserve. Taste.
  3. Peel, core and halve the pears. Arranged the pears, cored side up, in a buttered ovenproof dish. (Cut a small slice off the bottom of the pears so they will sit flat in the dish).
  4. Spread each pear with about 1 tsp chutney. Crumble the Cambozola and sprinkle on top of the pear halves.
  5. Bake for 10 minutes, or until the cheese has melted.
  6. Meanwhile, drizzle the dressing over 6 individual lettuce-lined salad plates. Place a pear half on each plate and serve immediately.
