Pears with Melted Cambozola
(Serves 6)
*Cambozola is an Italian cheese that combines camembert and gorgonzola.
- 2 green onions, white part only
- 1 small ripe pear, peeled and cored
- 3 Tbsp olive oil
- 1 ½ Tbsp white wine vinegar
- Salt and freshly ground pepper to taste
- 3 ripe pears
- 3 tsp chutney
- 6 ounces Cambozola
- ½ head Boston lettuce
- Heat oven to 375 F.
- In a food processor or blender, puree the green onions, small pear, oil, vinegar and salt and pepper until smooth. Reserve. Taste.
- Peel, core and halve the pears. Arranged the pears, cored side up, in a buttered ovenproof dish. (Cut a small slice off the bottom of the pears so they will sit flat in the dish).
- Spread each pear with about 1 tsp chutney. Crumble the Cambozola and sprinkle on top of the pear halves.
- Bake for 10 minutes, or until the cheese has melted. Meanwhile, drizzle the dressing over 6 individual lettuce-lined salad plates. Place a pear half on each plate and serve immediately.
