Mixed Greens with Peach and Pecan Dressing
(Serves 6)
*Wonderful with lamb or chicken
- 8 cups mixed greens torn into bite-sized pieces
- 1 peach, pitted and quartered
- 1 ½ Tbsp white-wine vinegar
- 1 ½ Tbsp water
- 1 tsp walnut oil
- ¼ tsp honey or maple syrup
- 1/8 tsp dried thyme
- 1/8 tsp freshly ground pepper
- 3 pecan halves
- Divide the greens onto six plates.
- In a blender, combine the remaining ingredients. Mix until smooth.
- Spoon over greens.
