Mixed Greens with Peach and Pecan Dressing
(Serves 6)

*Wonderful with lamb or chicken

  • 8 cups mixed greens torn into bite-sized pieces
  • 1 peach, pitted and quartered
  • 1 ½ Tbsp white-wine vinegar
  • 1 ½ Tbsp water
  • 1 tsp walnut oil
  • ¼ tsp honey or maple syrup
  • 1/8 tsp dried thyme
  • 1/8 tsp freshly ground pepper
  • 3 pecan halves
  1. Divide the greens onto six plates.
  2. In a blender, combine the remaining ingredients. Mix until smooth.
  3. Spoon over greens.
