Tessie's Uncooked Strawberry Jam
*She wrote that it is best not to double this recipe; the beauty of it is you can make jam without heating up the kitchen in summer
- 2 cups strawberries, hulled, halved and crushed
- 2 Tbsp lemon juice
- 3 ½ cups sugar
- Combine strawberries, sugar and lemon juice. Let stand until sugar is dissolved - about 20 minutes or so.
- Stir , then add 6 Tbsp Certo
- Stir constantly for 3 minutes or longer until it dissolves.
- Pour into clean containers or bottles. Let stand at room temperature until set, about 24 hours.
- Will keep in the refrigerator for six weeks or in the freezer for a year.
