Tessie's Uncooked Strawberry Jam

*She wrote that it is best not to double this recipe; the beauty of it is you can make jam without heating up the kitchen in summer

  • 2 cups strawberries, hulled, halved and crushed
  • 2 Tbsp lemon juice
  • 3 ½ cups sugar
  1. Combine strawberries, sugar and lemon juice. Let stand until sugar is dissolved - about 20 minutes or so.
  2. Stir , then add 6 Tbsp Certo
  3. Stir constantly for 3 minutes or longer until it dissolves.
  4. Pour into clean containers or bottles. Let stand at room temperature until set, about 24 hours.
  5. Will keep in the refrigerator for six weeks or in the freezer for a year.
