Cherry Relish
(Makes 4 cups)

*Delicious with cold meats and chicken

  • 1 cup dry red wine
  • ½ cup sugar
  • Grated rind (no white pith) and juice of 1 orange
  • 4 cups tart red cherries, pitted
  1. Pit cherries easily by pushing a large straw through centre. Pit will pop out.
  2. In large pot, place wine, sugar, orange juice and rind. Bring to a boil on high heat. Boil for 2 minutes, turn heat to low and simmer for 10 minutes to make syrup.
  3. Add cherries and simmer for 10 minutes longer. Remove the cherries and reserve in a bowl.
  4. On high heat, reduce liquid until slightly thickened, about 5 minutes.
  5. Combine with the cherries and chill.
