Caramelized Arctic Char with
Mango-Cantaloupe Salsa
(Serves 4-6)

For the Mango-Cantaloupe Salsa:

  • 1 cup cantaloupe, diced
  • 1 cup pineapple, diced
  • 1 cup mango, diced
  • 2 Tbsp cilantro, minced
  • ¼ cup red onion, minced
  • ¼ cup roasted red pepper, minced
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • 2 Tbsp granulated sugar
  1. Halve and seed the red pepper. Place cut side down on a baking sheet. Broil until most of the skin turns black. Remove from oven and place in a paper bag for 20 minutes. When cooled, peel off skin and mince.
  2. Combine all ingredients and chill for at least 2 hours.

For the Caramelized Arctic Char:

  • 4 8-oz filets of Arctic Char
  • 1 cup maple syrup
  • 2 Tbsp soy sauce
  1. Marinate the char in the maple syrup-soy sauce mixture for 20 minutes.
  2. Preheat a non-stick pan that has been lightly sprayed with oil. Pan sear the char for 3-4 minutes and then turn and cook for 2-3 more minutes, until done.
  3. Serve with the Mango-Cantaloupe Salsa.
