Barbequed Atlantic Salmon
(Serves 4)

  • 4 Salmon Steaks
  • 1 fresh lime
  • A few slices fresh gingerroot
  • ½ cup cornstarch or arrowroot powder
  • ½ cup butter, melted
  • 1 tsp fresh thyme
  • 1 tsp fresh dill
  • 1 fresh orange

Place the Salmon steaks on a plate and sprinkle with salt, pepper, juice of fresh lime and gingerroot. Refrigerate 2 hours. Coat fish with cornstarch. Next, roll the fish in the melted butter, forming a coating on each side. Sprinkle with chopped herbs. Place on a medium hot barbecue grill. Squeeze juice over the fish. Cook on each side until the flesh flakes with a fork and coating is browned.
