White Almond Sour Cream Cake

This is an amazingly easy, very scrumptious cake - excellent for large gatherings.

  • 2 boxes white cake mix
  • 2 cps all-purpose flour
  • 2 cups granulated sugar
  • 1 ½ tsp salt
  • 8 egg whites
  • 2 2/3 cup water
  • 4 Tbsp vegetable oil
  • 2 cups (16 oz carton) sour cream
  • 2 tsp clear vanilla extract
  • 2 tsp almond extract
  1. Preheat oven to 325F.
  2. Grease and flour cake pans of your choice. Shake off excess flour.
  3. Mix all dry ingredients by hand using a whisk in a very large mixing bowl.
  4. Add the rest of the ingredients and beat on low speed with an electric mixer for 2 minutes.
  5. Pour into prepared pans. Rap lightly on the counter once to release any air bubbles.
  6. Bake 35 to 45 minutes or until cake tester inserted in the center comes out clean.
  7. Let cool 10 minutes, before loosening edges with a thin, sharp knife and turning out onto racks to completely cool.
  8. Beautiful with strawberries and whipped cream.
