Raspberry Sherbet
(Serves 8)

  • ½ cup sugar
  • 1 cup water
  • 1 tsp gelatin
  • 2 Tbsp water
  • ¾ cup maple syrup
  • ¼ cu lemon juice
  • ¼ cup orange juice
  • 2 egg whites
  1. Simmer sugar and 1 cup water for 5 minutes. Soften gelatin in 2 Tbsp water, then dissolve in hot sugar and water mixture. Add maple syrup and cool.
  2. Stir berries and juices into cooled syrup and freeze until firm. Beat until light and fluffy. Beat egg whites and fold into berry mixture.
  3. Spoon into individual serving dishes and freeze.
