Raspberry Sherbet
(Serves 8)
- ½ cup sugar
- 1 cup water
- 1 tsp gelatin
- 2 Tbsp water
- ¾ cup maple syrup
- ¼ cu lemon juice
- ¼ cup orange juice
- 2 egg whites
- Simmer sugar and 1 cup water for 5 minutes. Soften gelatin in 2 Tbsp water, then dissolve in hot sugar and water mixture. Add maple syrup and cool.
- Stir berries and juices into cooled syrup and freeze until firm. Beat until light and fluffy. Beat egg whites and fold into berry mixture.
- Spoon into individual serving dishes and freeze.
