Tommy Adams' Grandmother's Famous Maple Syrup Cake
This recipe comes from the Adams family in Poltimore. On their farm, they produce maple syrup amongst other things. This cake, by the way, is to die for!
- 2 ½ cups flour
- 3 tsp baking powder
- ¾ tsp baking soda
- ½ tsp salt
- ½ cup butter
- ¼ cup brown sugar
- ½ tsp vanilla
- 2 eggs
- ½ cup hot water
- 1 cup maple syrup
- Preheat oven to 375F.
- Grease and flour 2 8" round pans. Shake off excess flour.
- In a large bowl, cream butter, sugar and vanilla. Add eggs and beat well.
- In a smaller bowl, xix together dry ingredients.
- In another small bowl, stir together hot water and syrup.
- Add to creamed mixture alternately with hot water and syrup.
- Pour into prepared pans and bake for 25-30 minutes, or until cake tester inserted in centre comes out clean.
- Carefully loosen around edges with thin knife and place on cake racks to cool.
For the Frosting:
- ¼ cup maple syrup
- ¾ cup brown sugar
- 1/8 tsp salt
- 1 egg white
- ½ tsp vanilla
- Combine all ingredients in top of a double boiler.
- Beat at high speed until frosting peaks.
- Keep on medium heat about 5-7 minutes.
- Stir in vanilla and beat some more.
- Icing should have shininess to it.
