Beef and Mango Kabobs
(40-50 skewers)
- 3/4 cup hoisin sauce
- 3 Tbsp soy sauce
- ½ cup rice vinegar
- ½ cup olive oil
- 1 Tbsp grated fresh ginger
- 2 lbs Beef cubes, cut into ¾" cubes
- 4 Mangoes, cut into ¾" cubes
- Combine the hoisin sauce, soy sauce, vinegar, olive oil and ginger in a medium-sized mixing bowl (not metal). Add the beef cubes and marinate 4-5 hours.
- Soak the skewers, if they are wooden in water to prevent scorching.
- Arrange the beef and mangoes on skewers - 2 pieces of beef and 1 piece of mango per skewer.
- Cook over hot barbeque for 7 to 8 minutes, turning only once halfway through.
