Beef and Mango Kabobs
(40-50 skewers)

  • 3/4 cup hoisin sauce
  • 3 Tbsp soy sauce
  • ½ cup rice vinegar
  • ½ cup olive oil
  • 1 Tbsp grated fresh ginger
  • 2 lbs Beef cubes, cut into ¾" cubes
  • 4 Mangoes, cut into ¾" cubes
  1. Combine the hoisin sauce, soy sauce, vinegar, olive oil and ginger in a medium-sized mixing bowl (not metal). Add the beef cubes and marinate 4-5 hours.
  2. Soak the skewers, if they are wooden in water to prevent scorching.
  3. Arrange the beef and mangoes on skewers - 2 pieces of beef and 1 piece of mango per skewer.
  4. Cook over hot barbeque for 7 to 8 minutes, turning only once halfway through.
