Filet of Beef with Red Pepper Butter
(Serves 4)

  • 1 piece Filet Mignon (2 ½ - 3 lb), cut into 4 slices, 1 ½ - 2" thick
  • Red Pepper Butter (recipe follows)
  1. Preheat the broiler on low setting.
  2. Broil the fillets for 6 minutes. Turn them over and top each with about ½ Tbsp red pepper butter. Return the meat to the broiler and cook to desired degree of doneness - another 6 to 9 minutes. Top each with another ½ Tbsp of butter and return to the broiler just long enough to melt the butter, about 30 seconds. Serve hot.

Red Pepper Butter

  • ½ pound butter, at room temperature
  • 1 red pepper, roasted, peeled, and seeded
  1. Combine the pepper and softened butter in the bowl of a food processor and puree until the mixture is smooth and the pepper is finally chopped. Refrigerated, covered, until ready to use.
